Ingredients
For 4 people: 160 grams of Beppino Occelli butter; Saffron pistils; A lemon; 5 g granulated sugar; 200 g fillet of sea bream or scorpion fish; Sea urchin pulp; Mint and lemon balm; Turmeric; 4 slices of wholemeal bread

Procedure
Take the Occelli butter, melt it slightly and work it in a planetary mixer with the saffron pistils and a reduction of lemon acidity obtained with lemon juice and granulated sugar. Turn on the planetary mixer and whip everything. Place the whipped butter and place it on a plate with a very fresh fish carpaccio on top, such as bream or fresh and frozen scorpion fish and some sea urchin pulp. Then decorate with herbs of your choice, including mint and lemon balm. And always finish with a lemon acidity but this time the lemon will be burned directly with the blowtorch. Take some wholemeal bread and the fun can begin.
