2 untreated lemons
200 g of Occelli® butter
180 g sugar
150 g of plain yogurt
300 g of rice flour
1 sachet of baking powder
1 egg
Icing sugar to decorate to taste
Preparation
Soft and fragrant, the lemon plumcake with Occelli® butter is the perfect dessert for breakfast or a healthy snack, to be accompanied with a good tea or cappuccino.
Procedure
Grate the zest of the two lemons, then squeeze the juice. Filter the juice well to eliminate the seeds and filaments.
Break up the Occelli ® butter (remember to let it soften outside the refrigerator before using it) and work it together with the sugar, so as to obtain a creamy and well-blended mixture. Then add the plain yogurt, the grated lemon zest and the sifted flour together with the yeast, mixing everything thoroughly.
Finally, quickly beat an egg in a dish and incorporate it well into the mixture, together with the lemon juice.
Line a plumcake mold with baking paper and bake your cake in a preheated oven at 170°C, for 35-40 minutes, checking the cooking with the classic toothpick test. Serve the plumcake when it has cooled a little, after decorating it with a sprinkling of icing sugar.
Two little tips: if you want to intensify the scent and flavor of lemon, replace the plain yogurt with lemon yogurt. And, to make the plumcake even more delicious, cover it with a glaze (to be prepared with powdered sugar and a little lemon juice).
