Soft cake with plum jam and Occelli® with fruit and Moscato Grappa

Torta morbida di marmellata di susine e Occelli® con frutta e Grappa di Moscato
Ingredients

120 g Occelli® butter

120 g of sugar

3 eggs

1 pinch of salt

120 g of 00 soft wheat flour

100 g of Occelli with fruit and Grappa di Moscato ®

100 ml of fresh cream

40 g of starch

Plum jam to taste

Icing sugar to decorate to taste

Preparation
  1. Let the Occelli® butter soften at room temperature, then cut it into pieces and work it with the sugar until you obtain a mixture with a creamy consistency.

  2. Combine and mix well the eggs, salt and then the sifted flour, adding it a little at a time.

  3. Dice the Occelli with fruit and Grappa di Moscato ® .

  4. Bring the cream to a boil in a saucepan and, with the heat off, add the pieces of cheese to the cream: mix quickly so that the cheese melts. Finally, add the starch, diluting it well.

  5. Mix the resulting mixture with the previously made compound, mixing everything thoroughly.

  6. Cover a cake pan with baking paper and place the cake batter inside, tapping the pan lightly to level it. Bake in a preheated oven at 180°C for about 25-30 minutes.

  7. When the cake is ready, wait for it to cool before transferring it to a serving plate. Then cut it in half with a long, thin knife to obtain two layers.

  8. Spread a generous and even layer of plum jam over the half of the cake remaining on the plate and cover with the other half.

  9. Decorate with a dusting of icing sugar and serve!
