The protagonist of this story is Occelli® with fruit and Moscato grappa , one of the most original productions of Beppino Occelli® who, starting from a Cusiè made with sheep's and cow's milk, has created an innovative cheese not only in appearance but also in flavors, capable of perfectly combining sweetness and acidity .
But where does this idea come from ?
Beppino Occelli® wanted to create this cheese as a tribute to the 150th anniversary of the Unification of Italy , giving life to a product capable of uniting, in flavours and aromas, North and South.
Occelli® with fruit and Moscato Grappa is in fact a tasty bridge that unites all of Italy and it is precisely in this perfect combination of opposites, of sweetness and acidity as mentioned above, that the strong point of Occelli® with fruit and Moscato grappa lies.
After a period of maturation, the Cusiè forms “chosen” by the Master maturers of Valcasotto are transformed into Occelli® and are enriched with fruit soaked in Piedmontese Moscato grappa, and then continue maturing, always for around 12 months.
