400g of pappardelle

200 g of Occelli® with black pepper and pink berries

10 g of long pepper

Salt to taste

Preparation

Cheese and pepper are the only ingredients needed to season these simple and delicious pappardelle. The cheese is Occelli ® with black pepper and pink berries, with an intense and particular flavor, while the pepper is not the classic black pepper that we all know, but long pepper: it has a sweeter and spicier flavor than black pepper (and is richer in piperine), with hints of cinnamon, vanilla and licorice. Even the appearance is different, because it is like a small pine cone.

In short, two very special ingredients for a very simple dish to prepare, but original and sure to impress.

Procedure

Place a pan with plenty of water on the stove to cook the pappardelle.

While waiting for it to start boiling, prepare the dressing. In a large bowl (preferably glass or ceramic) collect the Occelli® with black pepper and pink peppercorns, reducing it to small flakes. Then add the grated long pepper.

When the water comes to the boil, add salt and cook the pappardelle.

Drain them al dente, without completely eliminating the cooking water: then transfer it to the bowl, mixing it well with the seasoning. To this end, also add one or two ladles of cooking water, so as to bind and make everything creamier.

Serve immediately!
