  • 4 peaches
  • 40 g of walnut kernels
  • 100 g of Occelli goat's Verzin®
  • Lettuce to taste
  • Balsamic vinegar to taste
  • Extra virgin olive oil to taste
  • Salt to taste
  • Pepper to taste
Preparation

Fresh and simple, but delicious, the peach, walnut and Verzin Occelli® salad is a delicious dish perfect for hot summer days: ideal for staying light without sacrificing taste! It is good both as an appetizer and as a second course/single dish (just prepare more), but also for a lunch to prepare on the fly!

Procedure

Wash the peaches well, dry them and cut them into slices, as much the same size as possible.
Coarsely chop the walnut kernels; then cut the Occelli® goat's Verzin into slices and then into small pieces.

Wash some lettuce and, after cutting it, transfer it to the serving dish or to a large salad bowl. Then arrange the peach slices mixed with the Verzin and walnuts on the bed of lettuce.

Finally, prepare the dressing: with a fork, beat some extra virgin olive oil with balsamic vinegar, salt and pepper to taste. Drizzle the salad with the emulsion you just prepared and serve!

A tip: this dish can also be prepared in a “winter” version, replacing the peaches with pears!
